The beautiful subtle sweet taste is the result of koji enzyme working on cooked cooled white rice (its substrate). Traditionally it is made with Shoju. But I have tried with sake and this time white wine. Both worked well. I wanted to add a little floral flavour or aroma in addition to sweetness to both western and Asian dishes. East meets West.
